Alcoholic
- 1 cup cup sparkling wine or champagne
- 1/4 cup vodka
- 1 cup sparkling white grape or apple juice chilled
- 2 tbsp lemon juice
- 2 1/2-3 envelopes Knox unflavored gelatin* (alcohol weakens gelatin. You will need more compared to the non alcholic version)
- 1/4 cup granulated monk fruit or sugar
- sprinkles, edible gold leaf, or sugar
Non-Alcoholic
- 2 cups sparkling white grape or apple juice chilled
- 2 envelopes Knox gelatin unflavored
- 1/4 cup granulated monk fruit or sugar
- 2 tbsp lemon juice
- sprinkles, edible gold leaf, or sugar
Bloom the Gelatin: Combine white grape juice and gelatin in a saucepan. Let the mixture sit for 5 minutes to allow the gelatin to bloom. This step is essential to soften the gelatin and ensure it dissolves properly.
Heat the Mixture: Heat the saucepan over medium heat, stirring gently. Do not let it boil.
Once warm, stir in the vodka (or remove from alcoholic version, sugar (or monk fruit), and lemon juice. Heat until the sugar dissolves, then remove from heat. For alcoholic, add champagne last and stir to combine.
Set the Gelatin: Pour the mixture into your chosen molds or serving containers. Refrigerate for 3-4 hours or until fully set.
Decorate and Serve: Just before serving, sprinkle the tops with sugar, edible gold leaf, or festive sprinkles for an elegant touch.
