Servings: 2
Main Drink:
- 1½ cups coconut water
- 1 cup aloe vera juice (Substitute with decaf green tea or additional coconut water; filtered water also works if preferred.)
- 1 - 2 peaches (pit removed) (skin can be left on)
- 1 tablespoon lime juice
- ¼ - ½ teaspoons salt
- 1 tablespoon honey or maple syrup
Blackberry Purée:
- 1 ¼ cups blackberries
- 1 ½ tablespoons lime juice
In a wide-mouth jar, combine the blackberries and lime juice. Blend using an immersion blender until smooth, then strain through a fine mesh sieve to remove the seeds. Set aside.
In a separate blender, combine the coconut water, aloe vera juice, peach, lime juice, salt, and honey or maple syrup. Blend until smooth.
Add 2–3 tablespoons of the blackberry purée to the bottom of two glasses and fill with ice.
Slowly strain the peach mixture over the blackberry base for a layered effect.
Stir gently before sipping or leave it layered for that wow factor. Garnish as desired and enjoy!
