Three Delicious Box Cake Mix Cookies
These box cake mix cookies are the easiest cookies you will ever make. With only 4-5 ingredients and 20 minutes out of your day, you will have yourself the perfect cookies every single time.

Red Velvet Cookies
- 1- Red Velvet Box Cake Mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup white chocolate chips
- 1/2 tsp baking powder
Mint Chocolate Cookies
- 1- Chocolate Box Cake Mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1/2 cup mint chocolate or Ande's Chocolate Mints chopped
- 1/2 tsp baking powder
Snickerdoodle Cookies
- 1- White Box Cake Mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup granulated sugar
- 1 tbsp cinnamon
- 1/2 tsp baking powder
Preheat oven to 350F and line a baking sheet with parchment paper.
In a large bowl, add the cake mix, vegetable oil, baking powder, and one egg at a time and whisk together until completely combined.
Using a spatula, fold in the mix ins of choice. I used mint chocolate or Andes mint chocolate for the Mint Chocolate Cookies and white chocolate chips for the red velvet cookies.
Scoop the dough with a cookie scoop or in 1 1/2 tbsp portions and roll into a ball. If making the snikerdoodle cookies, place the sugar and cinnamon on a plate a mix, then roll the cookie dough balls in the sugar mixture and completely coat.
Arrange the cookie dough balls on the baking sheet 2-3 inches apart.
Back for 9-10 minutes and remove from the oven and allow to cool for 10 minutes.
Transfer to a cooling rack to finish cooling.
