The BEST Boat Dip Recipe

Y'all, if there is one dip I make more than any other for summer gatherings, it is this one right here. This TikTok inspired boat dip recipe is a cold, no-cook dip made with sour cream, shredded Colby Jack cheese, taco seasoning, ranch seasoning, and Rotel tomatoes. It comes together in one bowl in about five minutes, and every single time I bring it somewhere, people are asking me for the recipe before the bowl is empty.

Ingredients

  • 24 oz sour cream/light or regular
  • 2 cups shredded Colby Jack or cheese of choice
  • 1 packet taco seasoning my homemade or store-bought
  • 1 packet ranch seasoning my homemade or store-bought
  • 10 oz can rotel with chiles drained
  • Optional Sub for sour cream: Greek yogurt or bended cottage cheese for more protein

Instructions

  • In a bowl, mix sour cream with taco and ranch seasoning. Stir in shredded cheese, drained Rotel, and a pinch of salt.
  • Chill 30 mins to 1 hour (optional) and serve with chips or veggies.

Notes

  • Always drain your Rotel well before mixing it in. Extra liquid is the main reason this dip turns watery, especially if it sits out for a while at a party.
  • Don't skip the chill time if you can help it. I've made it both ways, and while it's still good right away, letting it rest in the fridge for at least 30 minutes makes the flavors come together, and gives it a noticeably thicker, creamier texture. An hour is even better if you have the time.
  • You can easily adjust the heat level. Mild Rotel keeps it gentle and family-friendly. Hot Rotel adds a real kick. Regular Rotel with green chiles falls right in the middle.
  • This dip is ideal for making ahead. The flavor genuinely improves as it sits, so I like to make it a few hours before I need it and keep it refrigerated until I am ready to serve.
  • Store leftovers in an airtight container in the fridge for up to three days. Give it a quick stir before serving again.
  • If you are serving it outdoors, keep it in a cooler or on ice as long as possible to hold that cold, creamy texture.
