Ingredients

  • 1 1/4 cup fresh strawberries hulled and chopped
  • 1/4 cup balsamic vinegar
  • 1/4 cup plain Greek yogurt or sub dairy-free yogurt
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 1 tbsp chopped onion
  • Salt and pepper to taste

Instructions

  • In a blender or food processor, combine the strawberries, balsamic vinegar, Greek yogurt or dairy-free yogurt, olive oil, honey (or maple syrup), and Dijon mustard. Blend until smooth and creamy. Taste and season with salt and pepper as needed.
  • If the dressing is too thick, add a little water, one tablespoon at a time, until you reach your desired consistency.
  • Transfer the dressing to a jar or airtight container and refrigerate for at least 30 minutes to allow the flavors to meld. Shake or stir well before serving. Store in the refrigerator for 5 days.

Expert Tips

  • Variations: You can really use any berries in this recipe– raspberries would work well. 
  • Vegan version: To make this dressing vegan, use dairy-free yogurt and swap the honey for maple syrup. 
  • Frozen fruit: I used fresh ripe strawberries, but if they’re out of season, feel free to use frozen strawberries thawed at room temperature for best results.

Use this dressing recipe in any of your favorite summer salads. I recommend a simple kale or spinach salad with goat cheese or feta cheese, crunchy walnuts, pecans, or almonds, and fresh berries and veggies like red onion, bell pepper, and more. Top with this tasty dressing and enjoy! You can also use it on a fruit salad for a tangy, creamy topping to your favorite fresh fruit.
