Key Lime Pie Yogurt Bark Recipe

This Key Lime Pie Yogurt Bark Recipe is the perfect high-protein treat for your whole family! Made with simple ingredients, this easy snack has a super creamy texture with crunchy toppings and freezes beautifully for a healthy, frozen treat on a hot summer day!

Ingredients

  • 2.5 cups Greek yogurt plain, non-fat or low-fat for higher protein can substitute dairy-free yogurt of choice.
  • 3.5 tbsp key lime juice
  • 2 tbsp powdered swerve or sub 1 tbsp honey. Adjust sweetness level to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon lime zest
  • 1/3 cup crushed gluten-free graham crackers I used Simple Mills Honey Cinnamon Sweet Thins
  • 1/4 cup toasted coconut unsweetened
  • 1 scoop vanilla protein powder regular or dairy-free

Instructions

  • In a medium mixing bowl, combine the Greek yogurt, key lime juice, protein powder, lime juice, lime zest, powdered swerve (or sweetener of choice, and vanilla extract. Mix until smooth and well combined.
  • Line a baking sheet with parchment paper or a silicone baking mat. Spread the yogurt mixture evenly over the prepared baking sheet, creating a thin, even layer.
  • Sprinkle the crushed graham crackers, toasted coconut, and lime zest evenly over the yogurt layer. Place the baking sheet in the freezer for at least 2-3 hours, or until the yogurt mixture is fully frozen and set. Once frozen, remove the baking sheet from the freezer. Lift the parchment paper or silicone mat from the baking sheet and break the frozen yogurt bark into pieces.
  • Enjoy immediately or store the bark pieces in an airtight container in the freezer for up to 2 weeks. Store the bark in a single layer or between sheets of parchment paper to prevent sticking

Notes

Expert Tips

  • If you don’t want a super icy consistency, I recommend using full-fat Greek yogurt! However, I’ve used light and the ones with lower fat and it still turned out delish.  
  • Yogurt bark recipes are super easy to customize to your liking. Use this recipe as a base and add try mixings and toppings of your choice like fresh strawberries or other fresh berries like blueberries, raspberries, or blackberries. Fresh fruit like bananas also work. Other favorite toppings include nut butter like peanut butter or almond butter, dark chocolate chips, granola, nuts, and more! 

Storage Tips

Enjoy immediately or store in an airtight container in the freezer for up to 2 weeks. Store the bark in a single layer or between sheets of parchment paper to prevent sticking.
