Casserole
- 1.5-2 pounds ground beef or ground turkey
- 1 cup finely diced onion 3/4 cup sauteed with the ground beef. 1/4 cup kept raw and reserved for top of the casserole.
- 2-3 cloves garlic minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tsp garlic powder
- 1/2 tsp ground mustard powder
- 1/2 tsp onion powder
- 1 large sweet potatoes peeled and cut into small cubes
- 2 cups cheddar cheese shredded
- 1 cup shredded lettuce
- 1 cup cherry tomatoes halved
- 1/2 cup diced pickles
- Splash of Worcestershire sauce
Sauce
- 1 cup cottage cheese sub plain Greek yogurt or mayo
- 1 tbsp mayo
- 3 tbsp ketchup
- 2 tbsp yellow mustard
- 1/2 tsp paprika
- 1-2 tbsp grated sweet onion
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 2 tbsp pickles chopped or dill relish
- 1 tsp white vinegar
- 2 tsp pickle juice
- Splash of Worcestershire sauce
Casserole
Preheat your oven to 375°F (190°C). In a large skillet over medium heat, brown the ground beef, breaking it into crumbles. Drain any excess fat. Add ¾ cup diced onions and minced garlic to the skillet with the cooked beef. Cook until the onions are tender and translucent.
Season the beef mixture with a splash of Worcestershire sauce, ground mustard, garlic powder, onion powder, salt, and black pepper.
In a separate skillet, sauté the sweet potato cubes until they are just tender.
In a greased 9x13 casserole dish, add the cooked sweet potatoes, ground beef mixture, and half the Big Mac sauce. Mix until everything is combined. Sprinkle the shredded cheddar cheese on top.
Bake the casserole in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly. Remove the casserole from the oven and let it cool slightly.
Top the casserole with shredded lettuce, halved cherry tomatoes, diced pickles, and 1/4 cup diced onions. Drizzle with more Big Mac Sauce.
