In a blender, combine coconut water, toasted coconut chips, peeled lime wedge, salt, and sweetener. Blend until smooth.
Add 1/2 cup of grape purée to the bottom of two glasses filled with ice. Slowly strain the coconut mixture over the top for a pretty layered look.
Stir and garnish with a lime wedge and grapes!
In a wide-mouth jar, blend the grape purée ingredients (grapes, grape juice, and sweetener) using an immersion blender until smooth. Set aside.
In a separate blender, combine the coconut water, toasted coconut chips, peeled lime, salt, and sweetener. Blend until smooth.
Fill two glasses with ice and add about 1/2 cup of grape purée to the bottom of each.
Slowly strain the coconut mixture over the grape purée to create a layered effect.
Stir gently before sipping and garnish with a lime wedge and fresh grapes, if desired.
