Snickerdoodle Cookies
- 1-White Box Cake Mix
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup granulated sugar
- 1 tbsp cinnamon

Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a large bowl, add the cake mix, vegetable oil, baking powder, and one egg at a time and whisk together until completely combined.
- Using a spatula, fold in the mix ins of choice. I used mint chocolate or Andes mint chocolate for the Mint Chocolate Cookies and white chocolate chips for the red velvet cookies.
- Scoop the dough with a cookie scoop or in 1 1/2 tbsp portions and roll into a ball. If making the snikerdoodle cookies, place the sugar and cinnamon on a plate a mix, then roll the cookie dough balls in the sugar mixture and completely coat.
- Arrange the cookie dough balls on the baking sheet 2-3 inches apart.
- Back for 9-10 minutes and remove from the oven and allow to cool for 10 minutes.
- Transfer to a cooling rack to finish cooling.
Notes
- I used Duncan Hines for my box cake mix.
- Make use to keep an eye on your cookies at the 8-9 minute mark. Remember, every oven cooks differently.
