If you have followed my Whole30 Recipe takovers you probably are already aware of how much I love a good frittata. My number one saying is, “CLEAN YO HOUSE AND MAKE A FRITTATA.” I love setting goals and starting fresh on Mondays and Sunday is a great day to reflect and prepare. Having a yummy frittata baking in the oven while you clean your house is sure to set you up for a fabulous week.
My new Chicken Enchilada Frittata not only rhymes but will change your meal prep life. This magnificent beauty serves as a great breakfast, lunch, and dinner that will save you during those busy weeks. I love setting goals and starting fresh on Mondays and Sunday is a great day to reflect and prepare. This frittata is absolutely mouth watering and will make you excited to wake up to heat it up and eat for breakfast. The Paleo and Whole30 enchilada sauce is out of this world amazing. It tastes so much better than the store bought version and is filled with clean ingredients.
In addition to setting goals, I also love saving money and having a “tight” food budget. At our house we usually make a big frittata a couple of times a week. My whole family will eat them for dinner instead of cooking an expensive cut of meat. Frittatas are also a great meal to whip up when you are trying to use veggies or eggs about to expire. Make sure to always assess what you have and try to create something that is not only delicious but that will also save you some cash.
