✨Ingredients✨
1 chia egg (1 tbsp chia seed, 2 tbsp water)
1/4 cup coconut oil (room temp)
1/2 cup coconut sugar
1 tsp vanilla extract
2/3 cup oat flour
1/2 cup rolled oats
1/2 cup oat milk
1/2 cup almond flour
1/4 tsp salt
1/2 tsp baking soda
1/2 cup @goodsamfoods chocolate chips

✨Instructions✨
Preheat the oven to 350 degrees. In a small bowl, whisk together the chia egg, coconut oil, coconut sugar, vanilla and salt until smooth. Add in all the other ingredients and mix until it forms a dough. Using a small cookie scoop, scoop out cookies onto a parchment lined baking sheet. Sprinkle each cookie with sea salt and bake for 9-12 minutes. Allow to cool for 5 minutes and then transfer to a cooling rack. Enjoy! (ad) #GoodSamFoods #ThriveMarket

Today I’m sharing one of my favorite recipes from my cookbook, My Peach Vinaigrette Pork Chops. They are Paleo + Whole30

Peach Vinaigrette Pork Chops🍑
6 bone-in pork chops
1/2 cup Peach Vinaigrette 
2 large peaches, pitted and sliced
6 cups arugula and spinach mix
Chopped fresh parsley, for garnish
Salt and pepper to taste

1.Grease the grill and preheat to 400°F or medium-high heat.
2. Place the pork chops on the grill and cook to your liking, 3 to 4 minutes on each side, depending on the thickness of the pork chop.
3. Transfer the pork chops to a platter and drizzle with the vinaigrette. Make sure to reserve a little bit of dressing to drizzle over the lettuce. 
4.Grease the grill again and add the peaches. Cook until tender and grill marks have appeared, 2 to 3 minutes on each side.
5. To serve, set a pork chop on each plate. Place 1 cup of the arugula and spinach mix alongside the chop and top it with a few grilled peaches, a drizzle of the vinaigrette, and a sprinkle of parsley.

Peach Vinaigrette 🍑
1 large peach, peeled and pitted 
1/4 cup light olive oil 
1/4 cup white wine vinegar
1 tablespoon lemon juice
1 tablespoon Dijon mustard 
1 tablespoon coconut aminos
2 cloves garlic 
Sea salt to taste
1/4 teaspoon black pepper

Add the peach, olive oil, vinegar, lemon juice, mustard, coconut aminos, garlic, salt, and pepper to a blender or food processor.
lend on medium to high speed until creamy, 30 to 40 seconds.3. Transfer to a jar, cap it, and refrigerate for up to 1 week.
