Rainbow Chia Pudding Bowl

Ingredients

  • 1 cup almond or coconut milk
  • 3 tbsp chia seeds
  • 1 tsp organic vanilla extract
  • pinch sea salt
  • 1 whole kiwi
  • 1/4 cups raspberries
  • 2 tsp unsweetened shredded coconut
  • 1 tbsp walnuts (chopped)

Instructions

  1. Add chia seeds, almond milk and vanilla extract to a mason jar.
  2. Shake and refrigerate over night
  3. Before serving, add to a bowl and top with fruit and nuts.
