Keto Chicken Thai Noodles with Almond Sauce (Whole30 + Paleo)

Thai is seriously one of my all time favorite takeout dishes. Not only do I love it, but so does Joel. You know me, I’m always on a mission to recreate our favorite comfort dishes in a healthy way. Well y’all, I did it again, my brand new Faux Keto Chicken Thai Noodles is just as good or maybe even better than the takeout version.

This recipe is a spin and inspired by the traditional Thai recipe. I took inspiration from the flavors, but used ingredients that were also Keto, Paleo, Whole30, Dairy Free and Gluten Free.

Ingredients Needed for this Keto Chicken Thai Noodles:

  • Natural Heavens Spaghetti Noodles
  • Cooked chicken
  • Garlic cloves
  • Red bell pepper
  • Green onion
  • Yellow onion
  • Sesame seed oil
  • Lime
  • Coconut aminos
  • Almond butter, no sugar added
  • Rice vinegar
  • Ground ginger
  • Garlic powder
  • Sesame seeds
  • Cilantro
  • Cashews
  • Red pepper flakes

How to make:

Heat a large skillet over medium/high heat. Add in the sesame seed oil along with the minced garlic and onions. Cook until the onions are translucent, around 2-3 minutes. Transfer the red bell peppers and cooked chicken and cook together for another 3 minutes.

Meanwhile, add a small sauce pan over medium heat and add in all of the almond sauce ingredients. Cook on medium heat until combined. Around 2 minutes or so.

Transfer the 2 packages of Natural Heaven Spaghetti Noodles to the large skillet with the onions, garlic, chicken and red bell peppers. Mix together and cook for 2 minutes. Pour the almond sauce and lime juice over the noodles and combine with a spoon. Sprinkle in the green onions and cook with a lid on for another 2-3 minutes or until the sauce is nice and combined.

Garnish with chopped cashews, fresh cilantro, sesame seeds and red pepper flakes. Enjoy!

Tips for this Keto Chicken Thai Noodles:

  • To make this meal even quicker, use a rotisserie chicken.
  • No need to boil or microwave these noodles. Just throw them in at the very end and they will cook in 3 minutes or so.
  • For additional flavor and texture, garnish with cashews, cilantro, red pepper flakes and sesame seeds.
  • Use this dish as a meal prep option. This recipe reheats great and will make your weekly lunches a breeze.

Love takeout  Thai, but don't love the calories? I've got you covered with my brand new Keto Chicken Thai Noodles. Hearts of Palm noodles, chopped chicken, onions, red peppers and drenched on a homemade almond sauce and garnished with cashews, sesame seeds, fresh cilantro and red pepper flakes. Keto, Paleo, Whole30, Gluten and Dairy Free.
Prep Time: 5 minutes
Cook Time: 12 minutes
Servings: 4 -5 servings

Ingredients  

  • 2 packages of Natural Heavens Spaghetti Noodles*
  • 1.5 pounds cooked chicken chopped
  • 3 garlic cloves minced
  • 1 red bell pepper julienned
  • 1/3 cup green onion chopped
  • 1/4 cup chopped yellow onion
  • 1 tablespoon sesame seed oil
  • 1/2 lime juiced
  • Sesame seeds cilantro, cashews, and red pepper flakes for garnish

Almond Sauce

  • 1/3 cup + 1 tablespoon coconut aminos
  • 1/3 cup almond butter no sugar added*
  • 1 tablespoon sesame seed oil
  • 2 tablespoons rice vinegar
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon garlic powder

Instructions

Notes

  • You can also sub zucchini noodles or spaghetti squash in place of the hearts of palm noodles. 
  • You can sub peanut butter for almond butter if desired. It will no longer be considered Paleo if you use that substitution.

    While I didn’t have cooked chicken ready, the sauce sounded so appetizing that I forged ahead without the chicken. This dish was FABULOUS! I often make your dishes because they’re quick but filling and love that they’re often keto too. Specifically this was the perfect blend of Asian inspired takeout taste with healthier ingredients. Another great recipe I’ll make again and again!

    Oh my goodness this is delicious! The picky hubs even loved it! I think that we will use just one package of the hearts of palm noodles next time (or double chicken and peppers.) I used peanut butter because we are out of almond but otherwise followed to a “t”! Always love your recipes!! Thanks!
