Peach Crisp Popsicles (Paleo)

Peach season is my favorite season. I can eat a peach just about any way, but my favorite way is in my NEW Peach Crisp Popiscles. These popsicles are creamy and delectable all while being healthy (Paleo, Dairy Free and Gluten Free). The perfect sweet treat dessert or snack!

The ingredient list for these Peach Crisp Popsicles are super simple and minimal. I love using fresh peaches, but if you are craving a frozen treat and don’t have fresh on hand, feel free to use frozen.

Ingredients For These Peach Crisp Popsicles:

  • Fresh peaches
  • Almond milk
  • Monk Fruit granulated sweetener
  • Vanilla extract
  • Pecans
  • Lemon juice

Pro-Tips For This Frozen Dessert:

  • Keep the skin on the peach when adding it to the blender. This gives the popsicle great color and texture.
  • Add the crisp to the bottom of the popsicle mold before filling it with the mixture, then add an additional layer at the base.
  • Make sure to keep in the freezer at least 3 hours before serving.
  • When ready to pop out the popsicles, run a little warm water around the outside of the molds for just a few seconds and gently remove the popsicles.

There are a lot of Popsicle molds I have tried and the ones below are my favorites. For me, I prefer using the ones that don’t come with the plastic base. I love adding my popsicle sticks.

Paleo Peach Crisp Popsicles

Total Time: 3 hours
Servings: 10 -12 popsicles

Ingredients  

Peach Popsicles

  • 2 large fresh peaches sliced
  • 1 tsp vanilla extract
  • 1 1/2 cups unsweetened vanilla almond milk
  • 1/3 cup Monk Fruit granulated sweetener
  • 2 tsp lemon juice

Crisp

  • 1 1/3 cup pecans
  • 2 tbsp Monk Fruit granulated sweetener
  • 1 tsp vanilla extract

Instructions 

Popsicles

  • Add all of the popsicle ingredients to a blender. 
  • Blend on high speed until smooth.
  • Add the ingredients for the crisp to a food processor and pulse until combined and crumbly. 
  • To each popsicle mold, add a spoonful of the crisp.
  • Pour the peach mixture over the top of the crisp in each mold. Don't fill completely to the top, leave about a 1/2 inch or so.
  • Sprinkle the remaining crisp on top of the peach mixture.
  • Insert popsicle sticks and freeze for at least four hours or overnight.
  • When ready to pop out the popsicles, run a little warm water around the outside of the molds for just a few seconds and gently remove the popsicles.
  • Enjoy!

Notes

  • If you have an almond allergy, feel free to sub coconut milk. 
  • If you do not have fresh peaches on hand, sub 3 cups of frozen peaches
